Key Lime Pie

Key limes always remind me of Key West, Florida.  I think every household had a tree in either the front or back yard.  This recipe for KEY LIME PIE is simple and if you like to substitute limes for the key limes it still tastes good.

INGREDIENTS
Crust
12 graham crackers, crushed
1/2 cup oats, finely chopped
1/4 butter, cold and cubed
2 tablespoons granulated sugar

Pie
1 14 ounce can sweetened condensed milk
4 egg yolks
1/2 cup key lime juice
2 tablespoons key lime pulp
1 tablespoon graded key lime peel

Whipped Cream
1 cup heavy cream
1/4 cup granulated sugar
1 teaspoon vanilla

DIRECTIONS
Crust
Preheat oven to 350 degrees.  Mix all the ingredients until crumbs form and press into 9″ pie pan.  Bake for 10-12 minutes or until lightly golden brown.  Let cool.

Pie Filling
Blend together all ingredients.  Spread into pie crust and bake at 350 degrees for 10-12 minutes.  Let cool

Whipped Cream (optional)
Beat all ingredients together until peaks start to form.  Be careful not to over beat.

SERVING: 6-8 | TIME: 40 minutes
